Some days you plan a meal.
Other days… you throw things in a crockpot, walk away, and hope for the best 😅
This soup was one of those days.
I didn’t measure.
I didn’t follow a recipe.
I didn’t even know if it would taste good.
I literally put chicken, a few pantry staples, and a bag of frozen veggies into the crockpot, turned it on, left for work, and hoped for the best!
And honestly?
It understood the assignment 🙌
Was it fancy? Nope.
Was it planned? Definitely not.
Was it cozy, warm, and exactly what I needed? Absolutely 💛
What I Used (No Pressure, No Rules)
- Chicken breasts
- 1 can cream of chicken soup
- Frozen mixed vegetables
- Chicken broth or water
- Salt & pepper
No measurements. No exact timing. If you’ve got it, toss it in.
Why I’m Sharing This
This is your reminder that:
- Dinner doesn’t have to be complicated
- You don’t have to do everything “right” every day
- Sometimes good enough is more than enough
Lazy meals count.
Comfort food counts.
Showing up tired and still feeding yourself (and your family) counts.
This is exactly why I love slow cooker meals. You don’t have to be a “cook” to make something warm and comforting — you just need a few simple ingredients and permission to keep it easy.
