Fall always seems to come with a little bit of everything.

Back-to-school schedules, sports, appointments, work, activities, earlier sunsets… and somehow everyone still expects dinner. šŸ˜‚

And if you’re anything like me, you probably don’t want to spend an hour in the kitchen every single night trying to figure out what to make.

The good news? Dinner does NOT have to be complicated to be good.

Here are five simple shortcuts that can make those busy fall nights feel a whole lot easier.

1. Keep a Few ā€œNo-Thinkā€ Meals in Rotation

You know those nights when 5:00 hits and you suddenly realize you have absolutely no idea what’s for dinner?

This is where having a few easy go-to meals can save you.

Think:

  • Tacos
  • Sloppy joes
  • Breakfast for dinner
  • Sheet pan chicken and veggies
  • Pasta with garlic bread
  • Quesadillas
  • Soup and sandwiches

They don’t need to be fancy.

The goal is to have a few meals you can make almost without thinking.

Sometimes simple is exactly what everyone needs. šŸ’•

2. Prep One Thing Ahead — Not the Whole Week

Meal prepping sounds great… until you picture spending half of Sunday chopping, cooking, portioning, and cleaning your kitchen.

No thank you. šŸ˜‚

Instead, try prepping just ONE thing ahead.

Maybe you:

  • Chop veggies for tomorrow’s dinner
  • Cook extra chicken
  • Brown ground beef for tacos
  • Wash and portion fruit
  • Mix up a sauce or marinade

Even ten minutes of prep can make tomorrow night feel so much easier.

You don’t have to prep an entire week to make a difference.

3. Use Store-Bought Shortcuts Without Feeling Guilty

Rotisserie chicken is your friend. šŸ˜‚

So are frozen vegetables, bagged salad, jarred sauces, refrigerated dough, pre-cut produce, and anything else that helps you get dinner on the table faster.

There is no prize for making every single thing from scratch.

If a shortcut saves you 20 minutes and keeps you from ordering takeout again, I call that a win.

One of my favorite tricks is using cooked chicken in tacos, casseroles, soups, wraps, or even on top of a salad.

One ingredient can turn into several easy meals.

4. Let Your Appliances Do Some of the Work

Busy nights are exactly why I love anything that can cook while I’m doing something else.

Slow cooker meals are perfect for fall because you can throw everything in earlier in the day and have dinner waiting later.

Sheet pan meals are another favorite because everything cooks together and cleanup is usually much easier.

And of course, I love having kitchen tools that make the chopping, slicing, mixing, and prep faster too.

Extra pasta can become lunch the next day.

And a big pot of soup can cover dinner tonight and lunch tomorrow.

Cooking once and getting two meals out of it can make a busy week feel so much more manageable.

Dinner Doesn’t Have to Be Complicated ā¤ļø

I think sometimes we put way too much pressure on ourselves when it comes to dinner.

It doesn’t have to be homemade from scratch.

It doesn’t need 47 ingredients.

And it definitely doesn’t have to take an hour.

Sometimes the best dinner is simply the one that gets everyone fed without making you completely exhausted.

So this fall, give yourself permission to take the shortcut.

Use the rotisserie chicken.

Make tacos again.

Throw dinner in the slow cooker.

Serve breakfast for dinner.

Whatever makes your night a little easier counts. šŸ’•
